If you love almonds like I do, this almond marmalade square is delicious for afternoon tea. Very easy to make. In fact I love all types of nuts so I bake a lot with nuts.

Almond Marmalade Squares

If you love almonds like I do, this almond marmalade square is delicious for afternoon tea. So easy to make.

Ingredients

90g unsalted butter

2 eggs

110g castor sugar

2/3c flour

1/3c self raising flour

1c marmalade (I use peach marmalade)

120g flakes almonds

60g ground almonds

Preparation

Preheat oven 160ºC

Beat butter, sugar and egg until fluffy. Mix in flour & self raising flour. Spread dough on a lined square pan 8x8 (or rectangle pan 8x12 if prefer a thinner layer of cake)

Spread marmalade evenly on top.

Combine 1 egg with half the flaked almonds and ground almonds. Spread on top of marmalade (press the flaked almonds into the marmalade).

Sprinkle with the remaining almond flakes.

Bake for 38 - 40 minutes or until golden brown. Dust with icing sugar when cool. Cut into squares and serve.
