We have baked so many banana cake recipes. Finally we found the one! Most moist and delicious banana cake ever.
This is also the banana cake recipe used for the banana layered cake by Milkbar Momofuku.
85g butter 1c sugar 1 egg 1/2c buttermilk 2 tbsp grape seed oil 2 ripe bananas Dry ingredients 1 1/3c flour 3/4 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt
Preparation Preheat oven 165C Mix all dry ingredients Mix sugar and butter in stand mixer Add egg Stream in buttermilk, oil Add mash banana Add dry ingredients Line square cake pan base. Grease side of pan. Bake 25m or until the pick come out clean.
Freeze for 45 minutes immediately out of the oven. This will keep the cake moist (Picked this trick up from another recipe)
Quick and easy banana cake for afternoon tea.
If you are more adventurous, go further and make a banana layered cake, exactly as you see in milkbar momofuku.
Then bake in a 10 x 13 inch pan. Cut 3 circles and layer with frosting. This you can go to town and play with the different types of frosting and different toppings.
This bake is for my hubby's birthday. He wanted a banana cake not too sweet. So instead of banana cream, I prepared cream cheese with white chocolate frosting and topped with birthday cake crumbs and pistachio. And we have a triple layered banana cream cheese cake!
A quick and easy one is also to just cut the cake into half and layer with chocolate ganache and mascarpone cream, topped with hazelnut brittle. I baked this for one of my team members birthday. Easy peazy!
And finally, this is one of my achievements; the milkbar momofuku banana layered cake. I followed the recipe to a T and voila, so good. Daunting at first but the result of a successful bake!
