Chewy chocolate chip cookies
After baking many many batches and trying different recipes over the years, I believe we finally decided this is our family favourite. Crisp on the outside and soft and chewy on the inside. This recipe is actually a combination of two different recipes and we've tested it over and over again.
Ingredients
227g unsalted butter
3/4c castor sugar
3/4c brown sugar
2 large eggs
2 teaspoon vanilla
340g semi-sweet chocolate chips (I use ghiradelli)
100g cacao nibs
Dry Ingredients
2 1/4c flour
1 teaspoon baking soda
1/2 teaspoon salt
1c nuts chopped (optional) I prefer walnuts or pecans
Preparation
Preheat oven to 180ºC
Mix flour with baking soda and salt; set aside.
In large mixer bowl, cream butter with sugar, brown sugar, eggs, and vanilla. Gradually blend in dry mixture.
Stir in chocolate chips and cacao nibs. add nuts (optional)
Drop dough 2" apart onto ungreased cookie sheets (using an ice cream scoop for consistency).
Bake at 180ºC for 11 - 13 minutes, or until golden brown. Sprinkle flaky salt.
Cool on tray for 5 minutes and transfer to wire rack.
